Watermelon Salad

Saying goodbye to the summer with this delicious and simple recipe.

Last days has being notorious the change of the season, we can already feel the awakenings dark mornings that bring to us the shorter days, with less minutes of sun.

Couple months ago that I moved to Málaga, although if here seems that we are far from use autumn jackets and unpackaged all the autumn- winter clothes, the body is starting to feel the change of the season, the skin started to be dryer and sensitive, while the body energy levels start going down and the tiredness rise.

This morning was rainy, but even with a warming sunlight after couple hours, was possible to feel the autumn in the air.

Then I decided to say goodbye to the summer recipes taking the best of half watermelon that I had from yesterday, mixing it with a bit of cucumber and mango, taking the best of the organics that are now in season.

It’s and easy, fast and delicious recipe. Seems that the main taste is sweet, because fruits are the base, but is really a delicious contrast between sweet and salty.🍉🥒

INGREDIENTS (I made for 2 servings)

  • 1/2 Watermelon
  • 1 Mango (ripe, but good for cut into cubes)
  • 1 Cucumber (I used 1/2 that it was all I had)
  • 2 Slices of Gouda cheese (Edam or feta cheese works too)

Cut these four ingredients into cubes and put them all in a bowl. To give to the recipe the accent taste add 1 tsp of Tamari, olive oil, the juice of 1/2 lemon (optional), your favorite seeds and finish it with a pinch of salt and pepper.
